Cooking the Irish Meal a Day Early

I'm cooking my corned beef and cabbage a day early. I'm going to be busy baking cakes for Church tomorrow, so I thought we'd have our "Irish" meal today. I am part Irish (I know everyone is on St. Paddy's Day) We have Irish on my Dad's side of the family, so I celebrate this holiday each year. I remember one year, when I was room mother for my son's class, and I made shamrock cookies for their St. Paddy's party. As we passed them out...one kid said, "These aren't shamrocks...they are 4 leaf clovers." It wasn't until then that I realized that shamrocks had only 3 leaves. I learned something from that little kid. I used to make cutout cookies for all the holidays back then. Easter always brought the cutest bunnies, ducklings, chicks and eggs.

Well, today we will have our "Irish" meal. Corned beef...I'm very fussy about my corned beef. I always buy a flat piece and will sometimes spend a half hour looking through all of them to find the best one. Sometimes I go to a couple of stores to find this piece. I like a layer of fat on the top and not much through the meat. This makes for nice slices for Reuben sandwiches the next day. I cook the meat with seasonings for a couple of hours and then start adding the vegetables. Carrots...just the right size, cabbage cut in 8ths, onion cut in 4ths, and small red potatoes. I fix the potatoes by washing them and cutting a strip of the peel off around the potato. These things all cook together until they are tender. Then I take the meat out and put it on the same platter every year arranging the vegetables around and then I put a pat of butter on the carrots, cabbage, and potatoes. When I was a girl, we called this dinner...boiled dinner. I asked for it every year for my birthday along with a lemon meringue pie or a maraschino cherry cake.

The corned beef is cooking on the stove and the vegetables are scrubbed and ready to go. The weather today is supposed to be in the 60's. Spring is finally on the way. I heard a 70 might be in store for us next week. I can't wait....

Oops...I forgot...I add a can of beer to the cooking liquid, not really necessary, but it tastes better I think :)

My meal will be served today, as well, Balisha. My SIL is coming over after work and I'll have a boiled dinner ready. All the prep work was done last night, I cleaned this morning, and I'm off luxuriate in the tub soon. I loved your story of the 4 leaf clover! Yup,I guess even little kids know there is a difference. We celebrated 2 nights early. We have an Irish-type pub about half a mile from us (at least that is the way they advertise themselves), so we had corned beef and cabbage with a side of potatoes. Not as good as home made, but we did bring home enough leftovers for another meal.

Sounds like we all had fun on St. Pat's day.To me...It doesn't matter if the meal is homemade or not...I love corned beef and cabbage...Balisha

Hi Balisha, Your corned beef sounds wonderful and I hope you all "Pigged out" on it! I wanted to tell you the package came today and I was just thrilled to death. This is not going outside. I am trying to decide where to put it in my kitchen. I think it will go under a light over my sink so I can look at it every day and think of you and your "bloomers". lol.
