Mom's Apple Salad


Yesterday, I posted a snack that I sometimes have..and apple with a dab of peanut butter along side. I found that some had never experienced that combination. It brought back a memory of something that we had each fall, when I was growing up....Mom's Apple Salad. As soon as the apples were in the farm stands...Mom would make her salad. We had it just a few times a year and  just in the fall. It went especially well with pork. I haven't made it in years. I used to make it when my kids were little...they probably don't even remember it...leaving out the celery (a certain young man didn't like "green things" in his food.) It has to be eaten right away and doesn't hold up well in the fridge...because of the apples turning brown.

  • Mom's Apple Salad


  • 1/2 cup creamy salad dressing (Miracle whip or Hellman's)
  • 1/2 cup peanut butter
  • 1/4 cup white sugar
  • 1/4 cup distilled white vinegar
  • 1 cup diced red apple
  • 1 cup diced yellow apple
  • 1 cup halved red grapes
  • 1/2 cup peanuts (optional)
  • 1/2 cup miniature marshmallows
  • 1/2 cup raisins
  • 1/2 cup diced celery

Directions

  1. In a large bowl, whisk together the salad dressing, peanut butter and sugar until smooth. Add the vinegar, whisking until dressing is creamy. Add additional vinegar to get creamy consistency, if necessary.
  2. Add the unpeeled apples, grapes, peanuts, marshmallows, raisins and celery to the dressing mixture and toss until evenly coated. Serve immediately.

Oh, that sounds delicious! Your apple-peanut butter combo is one we do often. It also reminds me of our Girl Scouts of America's "walking salad". Core an apple. Fill the hole with peanut butter. Poke some raisins down into the peanut butter and cover the top of the p.butter with a few. Wrap and pack. Needs no refrigeration. Another version I have done when I couldn't refrigerate: Make a peanut butter sandwich and cover the p.butter with raisins. Carry a washed apple to munch along with it.

Barbee...I had forgotten all about the Girl Scouts "walking salad" This is so neat, when we can bring back memories.

Hi Bonnie...I always think of the movie, when I eat fried green tomatoes. I've heard of a sandwich with them as the main ingredient.
