Refrigerator Dough Recipe


I had a request for more information on my rolls in my post yesterday. I got this recipe from a dear friend...years ago. I have made them countless times and never had a failure. When I had more to cook for...they came in handy. Now with just the two of us, I seldom make them. I've baked them off and put them in the freezer too. I would probably frost them after they thawed.
So here's the recipe... Balisha


Recipe for refrigerator dough.

2 pkg yeast
2 1/2 c water (warm)
3/4 c shortening
3/4 c sugar
2 eggs well beaten
8-8 1/2 c flour
2 1/2 tsp salt
Soften yeast in water. Add shortening, sugar, eggs, 4 c flour, and salt. Mix (I used elec. mixer) until smooth. Stir in remaining flour to make a soft dough. (You may not need all of it.)
Cover tightly and store in big bowl in fridge. this will rise up so punch it down occasionally. When ready to bake, shape into sweet rolls, dinner rolls, or 2 loaves of bread. Let them rise till double (about 1 hr) Bake at 400 deg. 15-20 min. for rolls, 35-45 for bread. This mixture keeps for several days in the fridge. No kneading is necessary. Just make a pan of rolls whenever you want some. Very easy and fool proof.

They sound easy. I am using my bread machine a lot at this point lazy I guess.

I am glad you posted this. I have a Christmas dinner for my friends at my shop and always trying to do something other than bought rolls. They look good with a sweet taste..yes I have it too....

They are super easy. At Christmas time...I put some currants and cherries in them and frosted them putting a few little colored sprinkles on top.I think that you could make a Christmas coffee cake with this recipe too. A date filling would be nice. Balisha

Balisha, thank you - I have this recipe in my file. Just when I am by myself and I do not eat much seems everything is too much.
Not so when children visit or when I get out to share with friends.
Still have some pumpkin pie, lemon ice box pie and 2 dozen orange cookies on hand - enough sweets for now :)

Thank you for the recipe. I used to have a refrigerator recipe but lost is somehow. This one looks familiar. It is so convenient to be able to have fresh baked bread without doing all the work that day.
