Tomatoes and a Recipe That is "In"

The tomatoes are starting to come in. We are a little disappointed in the plants themselves. They just haven't grown very big this year. I was too busy to take care of them...so they've just had to get by on their own. We still have enough for us to eat. The red ones are full of flavor, but the yellow ones have no flavor at all. Very bland. We won't be planting them next year.
I can make a meal out of sliced tomatoes and sweet corn. This morning I took a good whole wheat bread and skimmed it with mayo topped it with 4 slices of tomatoes and called that breakfast...along with V8 juice. Here's a recipe for something that is really "in" right now...
Tomato Bruschetta
3 tablespoons chopped garlic
2 tablespoons olive oil
4 to 5 vine ripe tomatoes
1 bunch fresh basil
1/2 c. olive oil
1/4 c. balsamic vinegar
1/4 to 1/2 c. shredded Parmesan cheese
fresh ground pepper
French bread

Saute garlic in the 2 tablespoons olive oil for about 2 minutes on medium heat. Place in 2 quart serving bowl to cool. Dice tomatoes and add to bowl.
Remove leaves only from basil stems and place in to small food processor with a little olive oil and process until finely chopped and add to bowl. Add olive oil, balsamic vinegar, shredded Parmesan and ground pepper to taste.
Serve on freshly sliced Frenc bread rounds - toast them with some olive oil if you like.
This is a reasonably low cal appetizer that is delicious. I'm taking it to a birthday party soon.

yup, that sounds just like something I would LOVE! Thanks. My tomato plants look great, but the tomatoes are no where near being ripe yet. Patience.

Oh I would love to have some fresh tomatoes to enjoy! You're so lucky. I guess I'll be making a trip to the farmer's market for mine...
Hope you're staying cool- OH is hot and humid. Got to love the midwest!

Your recipes and salad both sound wonderful. My tomatoes are getting ripe too soon. I know it is because the sun it so hot. I could live on bacon and tomato sandwiches with fresh tomatoes.
