Shortbread Cookies

These cookies are done and can be stored in a tin or in the freezer until closer to Christmas...if Hubby doesn't find them. :) I am making two kinds and a batch of fudge. I put together the dough for the cutouts and it is in the frig. I made these shortbread cookies today, because they keep very well.The dog was sleeping during most of the baking, so it was pretty easy. My recipe is as follows:

1 lb. butter softened
1 c confectioners sugar
4 c flour
1 tsp baking powder
1 tsp vanilla
Very few ingredients for a buttery rich cookie. Mix the above together and turn out on the counter to knead till well mixed. I press mine into two greased tart pans..I think they are 10 in. Bake 325 for about 30 min. Let them get just a touch of a tan color. Remove and take a plastic ruler and section them off into pie shaped pieces. Use a knife to cut through all the way while cooling. To decorate...I put sprinkles on before baking and press them in. When cooling drizzle with melted choc. chips and top with chopped walnuts and more sprinkles. Then you store them in tins when cool.
I can make the cutouts any time I want now. I usually freeze some of them unfrosted for later in the season. Frost them as I wish. When company comes we have fresh cookies.
The snow has stopped here. I am glad because hubby has eye surgery tomorrow, and I'm not crazy about driving in the snow. We have quite a distance to go in very open country. I woke up with a scratchy throat this morning too...so I have been washing hands all morning. I am planning on taking knitting with me tomorrow. I am making a couple of gifts and that will give me time to do them. Now I have to go clean up the kitchen and my work area downstairs. Groan! Do you remember Hazel or Alice on TV? I wish one of them was here with me today.

Hope the eye surgery goes well. I make shortbread cookies every year at Christmas also. Like you, I like them because they keep so well. I usually keep mine in Christmas tins and cut them in small shapes.

We are leaving in about an hour. Should be home tonight. It is not serious...hopefully his vision will be better and not cloudy.

I love the simplicity of this recipe, and when you mentioned "drizzle chocolate and nuts" I was won over :) I will have a tiny piece please.

These cookies are pretty tasty. Excuse me for a minute while I brush these crumbs off my keyboard.:)
Hubby is good...they removed a cloudy film from his eye and now he has to go for another cataract surgery.. sometime after the first of the year. We had such nasty weather and it seemed that fate was with us...yesterday. Bright, sunny and roads had been cleared.Now he's on his computer laughing, because one eye works and the other doesn't match. I told him to wear a black patch...I was always intrigued by pirates.
