I just picked a handful of red leaf lettuce that is growing around my grape tomatoes in a large container. This is the time of year, that I like to have a wilted lettuce salad for lunch. Just the salad, a piece of buttered toast, and lemonade or iced tea. I'm having it today, but it will be part of a larger meal. I have loved this salad since I was a little girl, staying at my Grandma's house. Mrs. Fowler, who lived next door, would invite me for lunch and this is what we had. I brought the lettuce in, this morning, and washed it thoroughly then gave it a few spins in the salad spinner. Put it in a zip-lock bag and put it in the fridg. till time to make the salad.
The Recipe for Wilted Lettuce
6 cups torn leaf lettuce
3 tablespoons finely chopped onion
3 bacon strips, diced
2 tablespoons red wine vinegar
2-1/4 teaspoons sugar
1-1/2 teaspoons water
Salt and pepper to taste
1 hard-cooked egg, sliced
Directions
In a large salad bowl, combine the lettuce and onion; set aside. (Sometimes I cook the onion with the drippings and rest of the ingredients.)
Fry the bacon. Combine the bacon drippings with vinegar, sugar and water and heat till bubblilng.
Pour over lettuce; sprinkle with salt and pepper. Add bacon and sliced egg; toss to coat. Yield: 6 servings.

I think this sounds like the salad my high school friend's grandmother used to make when I went to their cottage and stayed overnight. It was delicious!

How I Love!! that salad. Thanks for the reminder. No, I do not have the salad spinner, but I may put it on my wish list. Maybe I would do salads more often if I had one.
I do use a salad spinner and your wilted lettuce sounds good.
