Friendship Cake Recipe



If you read yesterday's comments, you will see that many of us had that starter for Friendship Cake on our counters. Check out the internet....there are all kinds of websites devoted to this cake. I'm going to tell  you a more modern version...
using a cake mix...it's the one that I used for my bake sale. Here goes. Today, this sounds like a lot of sugar, but you do drain the fruit...I guess that takes some of the sugar away.



Friendship Cake

1st day: 1 1/2 c cake starter
             2 1/2 c sugar
              Large can (22 oz) peaches and juice
              Stir daily

10th day: 2 1/2 c sugar
               Lg. can (1 lb or more) crushed pineapple and juice
               Stir daily

20th day: 2 1/2 c sugar
               18 oz maraschino cherries WITHOUT JUICE
                Stir daily

30th day: Make cake with DRAINED FRUIT. There will be enough fruit for 3 cakes. Give friends starter- 1                1/2 cups each. Mix one cake at a time.

CAKE
1 box yellow cake mix
1 box vanilla instant pudding mix
2/3 c oil
4 eggs
1 1/2 c drained fruit
1 c raisins
1 c chopped nuts

Mix cake, pudding, oil and eggs in a lg mixing bowl. Fold in fruit, nuts and raisins. Batter will be real thick. Bake 350 for 60 to 90 min. in a greased and floured bundt or small angel food cake pan.

I made mine in 8 in layer cake pans for the sale. I had to judge when they were done...I don't remember how long I baked them. I wrapped them and put them in the freezer for a month and they were delicious.

If you try this...let me know how you liked it.....and no...I don't want any starter. My diet is simpler today...not much sugar.

I used to have a recipe for the starter, I don't know if I do now or not. I never heard of the Friendship Cake, it sounds like a lovely idea. Imagine, a FB page?!

We've done this off and on and just couldn't eat all the cake! Ours was called Amish Friendship Break and I think you need one of those large amish families to eat it all the time.

Your posts about Friendship Cake brought back memories of the starter my friends and I passed back and forth when my kids were little. One of us would cook up all we had to take a break, and when we wanted another batch someone else would share. We could have called it Friendship Starter:)

They went round here las year which was interesting as the last time was in the 70's. Looks good.
