A Vintage Birthday Cake






It's Joe's 77th birthday today. Birthdays make him full of doom and gloom and I try to brighten his day by being positive and showing him how much I love and appreciate him. Although he said no birthday cake...(whoever heard of a birthday without birthday cake?) I went to the kitchen to make him a cake.Since he is all about the past...I decided to make him a Vintage Crazy Cake. This cake was made during the depression using no eggs, no butter, and no milk....also no electric mixer.  The use of white vinegar and the baking soda does the magic in the pan. Here's the easy recipe for this moist, chocolaty, rich cake.

Ingredients...
3 c flour sifted with 2 c sugar, 1 tsp salt, 2 tsp. b. soda, and 1/2 c cocoa. Sift these into a 9X13 ungreased pan. Make 3 wells in the flour mixture. Pour 3/4 c oil into one, 2 tbs white vinegar into one, 2tsp vanilla into the last one. Pour 2c cold water over it all and using a whisk...mix it up well.. getting into the corners of the pan so no flour is seen.Bake at 350 for 30-40 min. Frost when cooled or just dust with p. sugar.

This cake is not only easy to make, but it is fudgy and moist and keeps well.
