God knew what He was doing when He sent a gentle breeze and brought a lovely butterfly to set my heart at ease. The happiness of your friendship and the gentleness of your words have touched my life in special ways and now I feel assured. Thank you for your loyalty and for reading everyday. Muffins and a New Look...Again

I didn't realize how much my Grandma influenced what I eat until I started keeping this blog. I used to go to her house and have "sleepovers" once in a while. She was a wonderful cook and I remember her always being in the kitchen with her apron on. She would make these muffins occasionally and they are a favorite of mine. The recipe calls for buttermilk...which I don't care to drink, but I do have a use for the rest of the buttermilk in the quart...fried chicken. I'll be making that chicken tomorrow. It was the first meal that I cooked for Joe (he still talks about it) and he says that dinner sealed the deal :) Here's my recipe for bran muffins.

2 cups All-Bran Cereal
2 cups buttermilk
3/4 cup cooking oil
1 1/2 cups brown sugar, packed
2 eggs
2 cups unsifted all purpose flour
2 tsp. baking soda
1/2 tsp. salt

In a large mixing bowl, combine cereal, buttermilk and oil. Allow to stand for 5 minutes, or until cereal has softened.

Beat in brown sugar and eggs. Stir in flour, baking soda and salt. I added a cup of raisins,a handful of chopped dried apricots, and 1/2 cup of chopped walnuts.

Store batter in an airtight container until ready to use. May be stored for up to 2 weeks.

Makes about 36 normal sized muffins. As you can see, I make muffins a little smaller than the huge ones they sell in bakeries. I just don't want to eat that much, when I have a snack.

You can see that I changed the look of my blog...again. I've been searching for just the right look to attract more people. I read many blogs and visit some that are simply beautiful. Most of the ones that I enjoy are bright and happy blogs....having homemade banners, buttons, blinkies etc. Being a creative person by nature...I thought that I might give my blog a shot of bright and happy. I'm in the process of making a homemade banner with pictures that I have taken. My favorite photo editing site is stopping (Picnik) so I have had to learn to use another one. Some are so complicated, but I think that I have found one that I can work with. So, the ice cream cones will only be temporary until I learn to make my own banner. Stick with me please...My spring look is just around the corner.

Love the new look! Girl you know the way to a mans heart. LOL! Our grandmother did have a way of influencing us. I spent more time with mine than I did with my parents it seemed. LOL! Your muffins look so yummy. Buttermilk makes them so moist.

I like the ice cream cones. It might really be great when it so hot in the summertime.

I spent loads of time with my grandmothers. It was so fun. One was upright and a great cook and taught me to play some tunes on the piano. The other was not your traditional granny. She was loads of fun and would let us do anything as long as it didn't catch anything on fire. I miss them both so much. My grandson is coming for a sleepover next weekend. He is fun :)
