I Always Labor on Labor Day



The cool weather has been a boost for my energy. I have been busier than a one armed paper hanger today.. in the kitchen. Taking care of houseplants and making homemade chicken soup are the main things that I am doing. I always get hungry for soup in weather like this. Just to celebrate the holiday, I made a 7 layer dip...just for the 2 of us. So, soup for one meal and that delicious dip for another lighter one today. I've already posted Joe's recipe for the soup so here's mine for the dip.


7 layer Taco Dip

Mix together 8oz cream cheese and 1/2cup sour cream.

Add 1/2 pkg taco seasoning

Mix well. Then spread on bottom of platter or pie dish.

Mix a can of refried beans with a fork ...to loosen it up. Then spread on top of cream cheese mixture. I like Ortega Refried Beans.

Pour most of a jar of salsa on top of this...whatever heat you desire.

Put a pkg of shredded taco cheese on top of that.

Put diced tomatoes on top, then chopped green pepper, then sliced black olives. You can add chopped onions if you like. I didn't have guacamole...or I would have made an eighth layer.

Keep in fridge to let flavors blend. Serve with crispy tortilla chips.


Right now, I have back ribs in a roasting pan, in the oven. I'll cook them there for a little bit then transfer to crockpot to cook for 8 hrs. This and the soup will make a few meals this week. I plan to clean the basement tomorrow. I'm in the process of working on my closet...changing from summer to fall and winter. Is anyone else home doing household things today? It was a beautiful day...we should have taken a drive somewhere.

Is this a boring post or what??? I'll try to make tomorrow's more interesting.

Wow. If you have any energy left, you can work your cleaning way right over here! I absolutely hate to clean!
The 7 layer dip looks wonderful, making me hungry...
