It's a cool day in Northern Illinois. We woke to a gentle rain. We've had 2 inches during the night. We will need to mow again soon. Today would be a perfect day to clean closets or bake....hmmmm what should I do? Guess I'll make a cake and bake a chicken casserole for dinner. We have been blogging about apples and I promised to put my apple cake recipe in. It is so good...doesn't need frosting. If you want to pour a glaze over it...that's fine. Here's the recipe.
Apple Cake
1 1/2 cups of oil
2 cups of sugar
3 eggs
1 tsp. salt
1 tsp. baking powder
1 tsp. vanilla
3 cups chopped, peeled apples
1 cup chopped walnuts
2/3 cup golden raisins
1/3 cup currants
3 cups flour
Beat oil, sugar, eggs in a bowl. Sift together dry ingredients. Add to the oil mixture. Add the rest of the ingredients. Batter will be thick. Turn into a buttered, floured bundt or angel cake pan.
Bake 1 hr. 15 min.....or till done at 350.
Cool in pan.
Turn out carefully and drizzle with frosting if desired.
I haven't had trouble getting it out of the pan. I just go around the pan with a knife gently and then around the center hole. I hope you enjoy!

I absolutely love any kind of cake! I am going to copy down the recipe to make one day soon. We finally got a little rain today after two months of dryness. That picture looks so good and nothing beats cake and coffee. Have a good weekend.
